Einmachhilfe, also known as "preserving aid," is a substance used to preserve fruits, vegetables, and other foods. It contains citric acid, ascorbic acid (Vitamin C), and sodium benzoate. Einmachhilfe works by lowering pH, providing antioxidant protection, inhibiting microbial growth, and creating high osmotic pressure to preserve food. Citric Acid lowers the food's pH, creating an acidic environment that is unfriendly to bacteria and fungi. It also helps preserve the food's color and flavor. Ascorbic Acid (Vitamin C) prevents oxidation, which can cause discoloration and nutrient loss in preserved foods. It also contributes to the overall acidity. Sodium Benzoate prevents the growth of mold, yeast, and some bacteria, especially in acidic conditions.
